Cheer! I am wondering if it something with poms or signs.

I've been in cheer my whole life as a coach and athlete of all levels. I've only ever heard the term color block in fashion. If it relates to cheer, I would only think by uniforms. Who knows, maybe I'll learn something new though.

Probably positioning all color props for one color on one side, and all color props for the other color on the other side.

I'm not sure if varsity sells those or not. Never gotten signs from them. I'm too picky and want to go in person to see, feel and pick everything!

We got our signs like that at a local sign printing shop. Seems complicated but actually easy once they show you how they're made! It's 2 or 3 somewhat thin pieces of corrugated plastic that they adhere together. One side is normal. The other is slit down the middle to make it flipable. Love them!
