Here's how I did Disney, and it worked perfectly: booked one meal per day (around 5pm, before it gets crowded). When we got into the park we went left (because everyone instinctively goes right). We did Main St, Adventure Land, Frontier Land and then ate lunch at 11 am. Then we left the park and went to the hotel for a nap/swim. We went to dinner (Yacht club) at 5pm, then went over to Hollywood studios. We got back to Magic Kingdom at 9:30, got an ice cream and sat on the grass at the entrance to Main St. We watched the fireworks and then everyone leaves the park....but we stayed on site, so the park was open till 1am! So as everyone was leaving, we hopped on the Train and rode it back to Fantasy Land, then did the other half of the park. We walked right on all the rides! Definitely worth missing out on the hottest and most crowded part of the day for a swim and a nap! We did this with a 7 year old, so it's possible! Plus, we got a great family photo in front of Cinderella's castle as it struck midnight.
